As the festive season approaches, many people would love to indulge in some delicious rasmalai cake. This recipe is easy to follow and makes a delicious dessert that anyone can enjoy. The key ingredients are all pantry staples, so there’s no need to go out and purchase speciality items. You need a blender, bowl, measuring cups and spoons, and an oven.
Ingredients:
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup Rasmalai or another Indian-style milk cream
- 1/4 cup slivered almonds, toasted
Instructions:
1. Preheat the oven to 350 degrees F (175 degrees C). Butter and flour an 8×8 inch baking pan.
2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl. In the bowl of an electric mixer, cream butter and sugar together until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add flour mixture alternately with milk, beginning and ending with flour. Mix in vanilla extract. Pour batter into the prepared pan.
3. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Cool cake in pan for 5 minutes. Remove from pan to a wire rack to cool completely.
4. In a small saucepan, bring Rasmalai or another Indian-style milk cream to a simmer over low heat. Pour cream over the cake. Sprinkle with almonds.
