Creamy Fruitcake

INGREDIENTS

1cuptoasted cashews, chopped
1/2cupRaisins
1/4cupdried mango, chopped
1/4cupdried pineapple, chopped
1/2cuprum (optional)
1 1/2cupsAll Purpose Flour
1teaspoonBaking Powder
1/2teaspoonfine salt
1barButter, melted
1cuplight brown sugar
1cupNESTLÉ® All Purpose Cream, 125ml, chilled
2pieceseggs, beaten
3/4cupPowdered Sugar
1/2packetNESTLÉ® All Purpose Cream, 125ml, chilled
1/2teaspoonVanilla Extract

STEPS

Step 1Combine cashew, raisins, dried mango, dried pineapple and rum. (5 mins)
Step 2Pre – heat oven to 350ᴼF. (30 mins)
Step 3Sift the flour, baking powder and salt in a bowl. Set aside. (5 mins)
Step 4Whisk butter and brown sugar then mix until light. Mix in NESTLÉ® All Purpose Cream and eggs. (10 mins)
Step 5Pour cream mixture and rum mixture into the bowl of dry ingredients. Mix until combined. Pour cake batter into a greased loaf pan. (10 mins)
Step 6Bake for 30 minutes or until a toothpick comes out clean when inserted in the center of the cake. (30 mins)
Step 7For the glaze, combine powdered sugar, NESTLÉ® All Purpose Cream and vanilla extract. Mix well. (5 mins)
Step 8Pour the glaze on top of the Creamy fruit cake, set aside for 30 minutes to cool. Slice and serve. (10 mins)
